Lunch time. A @wensleydale_creamery cheese and lattice sandwich. Nice combination with a China Raw Pu Er Ancient Tree Dragon Ball. 1 ball, 110 ml of 95 centigrade water. At least 10 infusions. Washing, then, 80sec, 70sec, 60sec, 20sec, 30sec, 40sec, 50sec, 60sec, 70sec, 110sec. Earthy, fruity aroma’s of the tea and this beautiful cheese are a wonderful marriage!
Chocolate mint Brownie, a delicious combination with China Hong Cha Bi Luo. 6 grams On 110 ml, 70 centigrade water and steeping for 20-25-40-60 seconds.
Coquilles and a China An Ji Bai Cha. Normally I pair the coquilles with a Japanese green tea but this is also a great combination! 8 grams on 110 ml. 70 centigrade water. Sweet and savoury aroma’s enhanced in the coquille, roasted aroma’s in the green tea.
Stronger tea or just more of it to complement this pastry? This time I chose a huge mug. A Zealong New Zealand black tea, 7 grams and 500 ml 80 centigrade for two minutes did the best job! More savoury notes in the pastry and more fruity notes in the tea!
A good way to start the day. Chocolate croissant and a Japan Gyokuro. 7 grams in a Houhin, 60 centigrade water, 45 seconds.
A twelve month old Davidstow cheddar and a fresh Taiwan Oriëntal Beauty. Brings out the beautiful aroma’s of this cheese and makes the tea even sweeter and more complex!

Shortbread meets a Myanmar Pindaya green tea. 9 grams on 110 ml 70 centigrade water. Infusion time of 40-45-50 seconds.
Pickled zucchini and a beautiful fresh Lu An Gua Pian green tea. 4 grams in a glass and just keep adding 80 centigrade water.
Blueberry muffin and a China Fujian Golden Monkey black tea. You’ll need a lot of tea to join this huge muffin.
A simple tomato and mascarpone pasta, some Asiago on top and paired with a China Tie Guan Yin spring tea. 9 grams on 110 ml of water and infusion times of 20-20-30-35-40 seconds
