Iranian food is among the best food I have ever tasted. Iranian black tea is among the sweetest, most fruity and flowery teas I know. They seem to be a match made in heaven! 14 grams of tea on 1 liter of 95 degrees Celsius water and a steeping time of four minutes.

Tofu and a very rich and spicy sauce paired with a Malawi @satemwa_tea_coffee Smallholders OP1 black tea. Low water temperature and a high dose to balance the spicy notes. 9 grams of tea on 500 ml, 75 degrees Celsius for 1.5 minutes.
Farmer’s yogurt, apricots and a pumpkin honey to balance the acidity of the yogurt. Tea with an other fluid can be challenging (like soup and tea). We thought of pairing this cold desert with a cold tea. It was the hot China Huo Shan Huang Ya that did the job in a great way! 5 grams of tea on 110 ml of 85 centigrade water. First infusion 1.5 minute, following infusions 30 seconds longer. First infusion brought out the fruity, sweet aroma’s of the apricot, the second and third infusions the fresh, slightly acidic taste of the apricots. Beautiful to see how the tea “played” with this desert!
A fig cake made out of figs and nuts. To balance the sweetness and bring out the fruity and nutty flavour I paired it with a strong China Pu-Er Mannong. One toucha in a Yixing pot, 30-20-20-30-35-40-45 seconds steeping time, 95 degrees Celsius water.
Fresh dates are so sweet. China Huo Shan Huang Ya yellow tea is very sweet too. The flowery notes in the tea are accentuated by the sweet aroma’s in the dates. Great combination! By the time you think the dates are ready for the bin they are on their best 😁. 8 grams of tea in a gaiwan, 30-20-30-40-60 seconds infusion time and a water temperature of 85 degrees Celsius.
Katwijkse knip (a typical cookie from the Dutch town of Katwijk aan Zee)and a China Ripe Pu Er Green Mandarin. The citrus aroma of the tea and spices in the cookie enhance each other. The sweetness of the tea brings it all together. 1 Green Mandarin in a Yixing pot, 95 degrees Celsius water and at least 20 infusions 🎉.
Sometimes you accidentally come across a very special product. We visited a farmers shop called the Kastanjeboom, located just outside the small town of Bunschoten-Spakenburg. They sell a lot of beautiful local products but they also make their own clotted cream. The best I ever tasted. Read their story. Scones, Blueberry Jam and their great cream. Paired with a China Fujian Golden Monkey. 7 grams of tea on 500 ml, 75 degrees Celsius water. A true delight!
Plaice and a fresh salad. Beautiful paired with a Japan Gyokuro. 7 grams of tea in a Kyusu, 60 degrees Celsius water and 45 seconds steep. Umami and fish. So good!
Noodles, peas and a Tinjure Golden! 8 grams of tea, 500ml, 80 degrees water, 1.5-2.0-2.0-2.5 minutes. Sweet tea reduces the spicy notes of the food and brings out all the delicious aroma’s.
Rice pudding and a very light Nepal black tea. 7 grams of tea on 500 ml, 90 degrees of water. Brings out the sweet, fruity aroma in the tea!
Figs, goats cheese and honey. A great pairing in itself. Nepal Golden tea brings it all together. You need to drink the tea pretty hot and then the magic happens! 8 grams of tea, 500 ml of 90 degrees water, 1.5-2.0-2.5 infusion time.
Spicy paneer and a Golden Nepal black tea to reduce the spicy mouthfeel. Such a wonderful combination. 8 grams of tea, 500 ml, 80 degrees water. Steeping time of 1-1.5-2.0-2.0 minutes.
My favourite breakfast. Dosa. Perfect with a malty Assam tea! 7 grams on 500 ml, 95 degrees water, 3 minutes.
White bread, fried egg and a very fresh (1 day old) Nepal Tinjure green tea. Just great! 2 grams of tea and 180 ml of 80 degrees water. Just keep on pouring water!
Banana pancakes and a strong cup of Nepal black tea. Reduces the fatty mouthfeel and brings out the sweetness of the tea.
