Chana matar (chickpeas and green peas) and a spectacular black tea of Tinjure. Member of CTCF. No idea how they made the dish or the tea but the sweetness of te tea brings it all together.

Noodles and satè. Paired with a China Pu-Er Mannong. Sweetness of the tea balances the spicy notes. This means I really need a big mug of tea 😁 7 grams of tea on 110 ml of 95 degrees Celsius. 10-20-25-30-45 seconds.
Samosa’s and a CTC black tea of a CTCF cooperative. The sweet full flavour of the tea balances the fatty mouthfeel of the samosa and the vegetable flavours combined with the honey like tea really bring everything together! 3 grams of tea on 250 ml 90 degrees Celsius soft water.
Nepal meets The Netherlands. @ctcfnepal Golden Tips meets Venco Apothekers drop (sweet liquorice) @theehoffje brought with her. Beautiful soft mouthfeel with typical liquorice aroma’s and fruity aroma’s of the tea!
Dumplings, an unidentifiable great and very spicy soup. Chya of a complex tea does the job. Milk in a great tea? When it comes to pairing it with a spice dish: absolutely! Milk balances the spicy notes of the dish, the complex character of the tea becomes more dominant. A real surprise to me.
Bengali style Nepali snacks and a beautiful Nepal Golden Tea. One leaf and a bud. 6 grams of tea, 96 degrees Celsius soft water, first infusion minutes, second infusion 2 minutes. May seem strange but believe me. Learned it from my teacher @susmabastola
Stir fried veggies and white rice. Perfect combination with a China Yunnan Hong Cha Bi Luo. Balances the spice notes beautifully. 7 gram of tea, 500 ml of 75 grade Celsius water, steeps of 1.5-2-2.5 minutes.
One of my favourite dishes. Pasta Puttanesca. (Don’t translate). Pasta and seafood. Nice and spicy. Not easy to find the perfect partner. A shockbrew Gyokuro did a great job! 8 grams of tea, 250 ml of 60 centigrade water, shock over 250 grams of ice. Just perfect. Umami all over!
Quiche and @satemwa_tea_coffee Malawi Bvumbwe Handmade Treasure. The honey sweet tea brings all the ingredients of the quiche beautifully together. Beautiful soft and creamy mouthfeel. 7 grams on 500 ml 80 centigrade water. Steeping time of 2.5 minutes.
Chocolate cheesecake and a China Yunnan Hong Cha Bi Luo. 7 grams on 500 ml 80 centigrade water. 1-1.5-2 minute brews. Brings out the chocolate notes in the cheesecake in a wonderful way!
A great local goat cheese of @dekastanjeboom, whole wheat bun paired with a China Shui Xian Oolong. Cheese aroma’s become more powerful, even more mineral aroma’s in the tea.
Amaretti, apricot, clotted cream and Linden honey. Perfect with a Taiwan Dong Ding 2019 spring flush. 9 grams on 110 ml 95 centigrade water. 25-30-35-45-60 seconds. The flowery Oolong becomes fruity and flowery, the Amaretti very nutty. The mouthfeel is so creamy!
Spring rolls and an India Meghalaya La Kyrsiew SFTGFOP. Sweetness in the tea balances the spicy Hoi Sin sauce and enhances the sweetness. Delicious! 7 grams of tea, 500 ml, 75 centigrade water and a two minute steep.
Good book, great snack! Shrimps from the grill, China Milky Oolong (not steamed with milk or flavoured). 5 grams of tea in a small gaiwan. 25-30-35-40-45 seconds brew, water just off the boil. Umami all over the place!
