Pastry and Zealong New Zealand blackStronger tea or just more of it to complement this pastry? This time I chose a huge mug. A Zealong New Zealand black tea, 7 grams and 500 ml 80 centigrade for two minutes did the best job! More savoury notes in the pastry and more fruity notes in the tea!
Sandwiches and Japan AsatsuyuLovely lunch. Sandwiches and a big mug of Japan Asatsuyu black tea. 7 grams on 500 ml 80 centigrade water. 1-1.5-2 minute infusions.
Dosa and Assam teaMy favourite breakfast. Dosa. Perfect with a malty Assam tea! 7 grams on 500 ml, 95 degrees water, 3 minutes.
Samosa CTC black teaSamosa’s and a CTC black tea of a CTCF cooperative. The sweet full flavour of the tea balances the fatty mouthfeel of the samosa and the vegetable flavours combined with the honey like tea really bring everything together! 3 grams of tea on 250 ml 90 degrees Celsius soft water.
Rice pudding and Nepal black teaRice pudding and a very light Nepal black tea. 7 grams of tea on 500 ml, 90 degrees of water. Brings out the sweet, fruity aroma in the tea!
Chana matar and black tea of TinjureChana matar (chickpeas and green peas) and a spectacular black tea of Tinjure. Member of CTCF. No idea how they made the dish or the tea but the sweetness of te tea brings it all together.
Chocolate cake, fruit and Taiwan Sun Moon Lake black teaIt’s Sunday! Chocolate cake and fruit. Great with a Taiwan Sun Moon Lake black tea. 9 grams of tea on 110 ml of 85 centigrade water. 20-20-25-30-40 seconds brew time. Delicious!
Sour fruit and sweetened black teaWhat when they serve you a sweetened black tea? Just pair it with some sour fruits 😁. The acidity balances the sweetness of the tea.

One leaf and a bud. 6 grams of tea, 96 degrees Celsius soft water, first infusion minutes, second infusion 2 minutes. May seem strange but believe me. Learned it from my teacher @susmabastola
